Culinary Arts
New restaurants, bistros, grills, caterers and hotels open everyday. The need for qualified culinarians continues to grow. Culinary Arts program is a fun and exciting program based on instruction and hands-on experience. The students share camaraderie and a common goal of excellence. With the generous support from local industry, UAA offers one of the finest culinary educations available in the Pacific Northwest.
Dietetics
The Bachelor of Science in Dietetics is designed for individuals who would like to become a Registered Dietitian. The UAA Didactic Program in Dietetics (DPD) is accredited by the Commission on Accreditation for Dietetics Education (CADE). It offers the required coursework to complete a Bachelor's degree in Dietetics and meet the eligibility requirements for entry into a CADE accredited Dietetic Internship. Students will complete the first two years of study as a pre-dietetics major. Upon completing specific requirements, students may apply for admission to the DPD program. There are a limited number of spaces so the application process will be competitive. Applications will be due April 4, 2011. In subsequent years, applications will be due on February 15 of each year. Applications are only accepted one time per year.
Dietetic Internship
The UAA Dietetic Internship prepares pre-professionals for eligibility to take the National Registered Dietitian exam. The internship provides diverse, supervised, practical experiences and meets all Commission on Accreditation for Dietetic Education (CADE) requirements. Students are eligible to apply if they have completed at least a bachelor's degree and have a Didactic Program in Dietetics Verification Statement, within the past five years, from a Commission on Accreditation for Dietetics Education accredited program.
Hospitality & Restaurant Management
Be a part of Alaska’s expanding hospitality and tourism industry! Complete your Hospitality & Restaurant Management degree at the University of Alaska Anchorage. UAA’s degree program prepares you for exciting, unlimited careers in the ever expanding service industry. Unlike other 4-year programs, UAA’s unique course of study features both a strong culinary core and a progressive business management core. Furthermore, UAA provides the opportunity for you to experience studies in other resort areas. Through partnerships with Northern Arizona University (NAU) and University North Las Vegas (UNLV), you study two semesters at either institution where you can tailor your hospitality studies. NAU and UNLV are two of the top ten hotel-restaurant programs in the United States.
Nutrition (bachelor and minor)
Nutrition is a rapidly growing and changing field; this degree will provide you with the foundation to make a difference in people's lives. The Nutrition degree is designed so that students may complete their General Education Requirements and support courses at UA campuses around Alaska. The Dietetics and Nutrition courses are delivered online, allowing students to complete the degree without relocating. Graduates of this program may go on to work in areas such as public health, nutrition writing, health and fitness coaching, nutrition sales or government health and food safety, and may go on to pursue graduate degrees such as a Master's in Public Health or Master's in Health Care Administration. A minor in nutrition will act as a supplement to other fields of study and the application of knowledge to target populations and systems. UAA's minor in Nutrition can be completed via distance delivery or through the traditional lecture setting. Link to Nutrition Minor Flyer
WIC CPA Training Program
The WIC CPA Training Program is a partnership between the University of Alaska Anchorage (UAA) and the State of Alaska, Department of Health and Social Service Office of Children's Services: Family Nutrition Services.
