Cuddy 109Riza Brown holds an AAS in Culinary Arts and a BA in Journalism from UAA. Upon graduation, Professor Brown started a catering company (currently still in operation), which is invaluable experience for her Catering Management class. Her professional experience also includes working in restaurants for over 20 years in every capacity possible and food writing and restaurant reviewing for the Anchorage Daily News, F Magazine, 61 Degrees North and various other publications. Besides Catering Management, Professor Brown teaches Quantity Purchasing, Hospitality Concept and Design, Beverage Management, Hospitality and various culinary workshops. She is a faculty advisor for the Culinary Club and is an advocate for community through culinary togetherness.

Cuddy 131Chef Jana Patterson joined the program as a Culinary Instructor in 2020. Jana graduated from Colorado Mountain College with an AAS in Culinary Arts and completed a 3-year American Culinary Federation apprenticeship. Her 20-year career in the culinary industry has given her extensive experience in a variety of restaurant positions, as well as leadership roles within Whole Foods Market and a background in commercial production. Most recently, Chef Jana has developed her own business in culinary consulting and private chef work. She is passionate about producing well-rounded culinary leaders and industry shapers.

Cuddy 110Dr. Amy Green joined the program in 2005. She has managed hotels and restaurants in New Orleans, South Florida and San Francisco. Dr. Green has a bachelor’s degree in Hotel and Restaurant Management from Northern Arizona University, a master’s degree in education from Alaska Pacific University and a doctorate degree in education from Walden University, with an emphasis in instructional technology. Dr. Green has taught a variety of courses including front of house dining room management, foodservice management, bar and beverage management, hospitality concept design and development, commercial food purchasing and hotel management. Dr. Green is also the coordinator for the American Culinary Federation accreditation efforts and assists with program service and fundraisers.

Cuddy 123Chef Kellie Puff joined the program in 2018. She holds an AAS in Culinary Arts (2002) and a BA Hospitality and Restaurant Management (2013) from UAA. Chef has 10 years teaching experience from ASD’s King Tech Culinary Arts Program as well as many years working in restaurants around Anchorage. She is a member of the American Culinary Federation and holds a certification through them as a Certified Working Pastry Chef. She enjoys mentoring students for baking competitions and making delicious pastries for all to enjoy!

Cuddy 118Whitney Flores is the Student Success Coach for Culinary Arts & Hospitality Administration. She is a UAA alumna, earning her Bachelor of Science in Environment and Society with a minor in Nutrition. She spent five years working in the Division of Social Sciences and comes to us with university knowledge and a passion for helping students succeed through their degree programs. She is a staff advisor for the Culinary Club and advocates for creating a sense of place through food. Whitney loves all things that are food related and is thrilled to be part of the team!

Cuddy 108Sarah Morisky is the Program Assistant for Culinary Arts & Hospitality Administration. She started in October 2018 and has previously worked for UAA from 2002-2010. She enjoys baking, reading, and spending time with her kids.
